Overview
:  Setting up your utilities in NYC is fairly simple.  Follow these tips below.
.

Cable:  If you're moving to NYC, getting your cable is easy.  Call 1-800-OK-CABLE, type in your zip code, and they'll transfer you to your new cable company.  Or, you can use their website.

Electric:
Call ConEd at 1-800-75-CONED to get your service set up.  After you've signed up them, you have the option to switch to a different supplier.  You can see some options
here.

Gas:  The same deal as electric.  Call ConEd.

Phone:
You have a number of choices for local and long distance  service.  The big boys are:

AT&T local at 1-800-741-6571
MCI at 1-888-624-5622
RCN at 1-800-746-4726
Verizon at 1-718-890-1550

Water:
Since you'll be renting your apartment (unless you're filthy rich) in NYC, you're not responsible for water.  Your landlord will take care of that.
